Heading down to your amazing city of New Orleans this weekend... wondering how feasible eating at Boucherie will be without reservations. Should I try going for lunch instead of dinner? I'd rather not have an awkwardly timed dinner (5pm or 10pm)... but I'd really rather not leave without eating there.

Yeah, I've shown up right at dinner rush, and they were booked, but the guy said that he would squeeze us in if we would be done in an hour. - which we were able to do easily.

You could go for lunch. If your heart is set on dinner, call & check out the wait. I have waited a very long time when I had reservations. It's tiny; lingering tables & extra walk ins can through them off.
