In "The Kitchen Cookbook" I found a connection to Kimbal as well as his passion for food, eating, the land and all the love that comes from the Kitchen. To feed people is a sacred act - and this cookbook has that feel. The feel that his expression of being human- of growing, harvesting, preparing, serving, and eating - is sacred in all of it's domains.
The recipes I tested were yummy - a bit more complex than I usually construct - but the complexity paid off. Thanks for a yummy gift to my palate and mind.
I look forward to visiting one of the restaurants already familiar with their offerings prepared by welcoming professionals.

Shared meals are what brought humanity together in our archaic past; spawned the Agricultural Revolution; birthed civilizations; incubated religions. The Kitchen Cookbook reminds us that the art and science of cooking begins and ends ... with us. So my daughters and I just flipped straight to the "Bakes & Sweets" (of course). They didn't know we could make donuts! Heck, I didn't know we could make donuts. But we're off to the super for all the ingredients: "Savory Crullers with Whipped Almond Butter". Thank you, Kimbal, Hugo and The Kitchen team!

It’s Kimbal’s style that draws you in. All your senses are engaged with this book. His writing, sense of gratitude, and openness in sharing stories and Kitchen “secrets” like the Szechuan chili crisp makes the reader/cook feel (I know this is cliche) like he’s a friend.
You’ll love how he met his co-founder, Hugo.
Having lived in Maine, I would have been much more likely to eat Lobster Rolls (p. 148) had they been Kimbalized (my word, you can use it).
Why go to France when the most perfect sounding Cassoulet’s (p. 191) been painstakingly divided into 4 separate sections of preparation & cooking, making following each step more manageable. Although I know where to buy beautiful duck legs, I must track down the juniper berries(can I use them from our shrubs?) as well as star anise pods. Thank you for adding just a hint of red pepper flakes.
And for a gal who seldom indulges in a dessert, I am ALL IN to make the Chèvre Cheesecake with Marconi Almond Crust (p.269)…it’s practically health food.
I shan’t give any more away. Buy the book. It’s a good read even if you don’t cook but dream of delicious food.
