Clover Hill is one of Australia’s very few premium sparkling houses solely producing sparkling wines in the traditional method. We have adopted an anchoring multi-vintage philosophy: a single-minded dedication to crafting wines of perennial consistency and complexity.

Our CEO recently told @maxallendrinks that our shift to multi-vintage was driven by the desire to “break through the clutter” and truly stand out against other sparkling wines.
The core expression of our multi-vintage philosophy is found in our Tasmanian Exceptionnelle MV and Tasmanian Rosé MV. With fruit sourced from our estate vineyards and other select vineyards in Tasmania, they are consistently bright and vibrant, with a crunchy and persistent acid.

We put Josh to work in the vineyard and afterwards treated him to a masterclass.
His favourite? Our MV Rosé. We think he enjoyed his bubbles a lot more than he did pruning the vines, which was harder than he imagined.

Our low-intervention approach to winemaking means we’ve significantly reduced the use of sulphur in our wines, which typically means your next day is a little easier. Sulphur (SO2) is a preserving agent that protects wine from oxidization, so it’s a common additive in most wines. Instead, we use stainless steel pressure tanks in the production of our MV Exceptionnelle and MV Rosé.
Here, we prefer to let the natural beauty of our vineyard and innovative winemaking techniques do the hard work.

Ian presented all eight wines in the Clover Hill sparkling range, starting with our MV Exceptionnelle and MV Rosé, through to our prestige late disgorged.
While Gemma preferred the Vintage Riche for its creamy and moreish characters, her friends opted for the MV Exceptionelle.
“It’s fresh, acidic and a bit zingy,” said Linda, “it’ll be lovely with the Tassie salmon I’m having tonight.”
Our masterclass tasting is one of the very few tasting experiences in Australia where you will exclusively taste methode traditionelle Tasmanian sparkling wines.
