How to cook octopus per Action Bronson

Action Bronson is a rapper and a chef, and he loves to go over-the-top. His Blue Chips series of mixtapes, for instance, is numbered like this: Blue Chips, Blue Chips 2, and now Blue Chips 7000. Similarly, when Bronson (real name Adrian Asllani) appeared on Late Night With Seth Meyers on Monday night to tease his Vice cooking show, F–k That’s Delicious, he cooked octopus with his bare hands.

“I only became acquainted with the octopus recently,” Bronson said. “I didn’t eat seafood growing up for some reason, I was scared of it. But now that I’ve travelled and I’m seeing these things and I’m diving with them and I’m swimming together with these things…”

“That makes you want to eat them?” Meyers asked.

“Yes!” Bronson said.

Bronson followed this up by taking the octopus, cutting off its head, and screaming. He then placed the decapitated octopus in a dish with chili and garlic (and a wine cork, to tenderize it). After two hours in the oven, it comes out nice and crispy (Bronson brought different octopus meats at different stages of the process to demonstrate).

“It has to be charred beyond belief. It’s like a bagel, you want it really crispy on the top,” Bronson said.

“They’re the bagel of the sea,” Meyers said.

Bronson handled everything with this bare hands (“We don’t even need tongs, my hands are made of asbestos”), nor did he bring silverware to the show.

“We’ve had a lot of chefs on the show. You’re definitely the one that’s touched the food the most,” Meyers said.
