My first impressions are this is a really nice knife with exceptional fit and finish.
It feels good in the hand and is light.
Easy to clean.
Blade is sharp out of the box. It shaves my arm hair out of the box, but with a touch of effort.
Could use some slight work on a high grit stone I'd imagine if you wanted it to be absurdly sharp, maybe even just a strop, but this knife is sharper out of the box then my Shun Classic 6 inch chef knife, my Tojiro DP 240mm Gyuto, any of the midrange of the higher range Henckels I've used, along with the Fujiwara FKM Gyuto, a couple other random Shun's and some other random knives.
Blade has a nice short profile to do what a parer should do.
I've only put it through about a dozen cherry tomatoes, some strawberry coring and halfing and minced some garlic with it for the hell of it even though I prefer a chef for the latter.
So far I'm very happy with it. I'll comeback and do an update in a week or so and then again in a couple months. In a week or two when I've really put it through it's paces, if it's still holding up and a joy to use, I'll up it to 5 stars.
On a simple initial impression I'd definitely recommend this knife though.

Ce couteau est d'un tranchant que je n'avais jamais connu. Il faut faire très attention car la pointe ou le côté pointu de la lame situé près du manche percent la peau des mains avec une facilité déconcertante.
Le produit est très cher, c'est incontestable. Mais je pense que la qualité est au rendez-vous.
Je m'en sers actuellement pour découper des canards gras et l'exercice n'a plus rien à voir avec ce que je faisais avec mes anciens couteaux.
