Food labelling from prepared products for direct sale (PPDS). Sometimes allergen traces are present but not labelled. Allergen information can come from allergen leaflets designed to help customers select food. In this example, a allergen risk assessment hasn't been done to identify cross contact/cross contamination risks. Employing competent people to do the job is key. Manuf testing products before labelling maybe a good practice. #Allergen #AllergenAwareness
