When organizing trips for our clients there is a very important aspect to consider: planning restaurants! As you know, in Italy we are spoiled for choice between genuine trattorias, historic restaurants and important starred restaurants. Generally I prefer to organize our guests' dinners in authentic trattorias because in this way they have the opportunity to experience true Italian culture. Instead I find the experience in starred restaurants a little too international and they can easily find it in their countries of origin. What do you think about it?

When excellence comes together for a common goal

Do you know that the knowledge of making a Caesar salad at the table has become quite rare, with 9 out of 10 people in any restaurant not knowing how to do it. This indicates a significant decline in this particular skill among restaurant staff, which is a missed opportunity for creating a unique dining experience. In one restaurant I was doing training I suggestion to incorporate table-side Caesar salad preparation on a weekly or monthly basis clearly had a significant positive impact on the restaurant. Training the waiters to perform this engaging task not only increased sales but also captured customer interest effectively.

I'll be the first to admit, I am not a huge reader (something I'm working on). But, when there's something I can get into, I usually talk everyone's ear off about it post-read. While on vacation, I read Will Guidara's Unreasonable Hospitality. I loved it, and think whether you have a background in hospitality or not, I'd implore you to read it! It provides Will's amazing story about his upbringing, dedication to his team, the restaurant industry, and both his successes and failures over the course of his career. There's most definitely something everyone can learn from, big or small. Of course, my favorite portion was coffee related, when Will talks about the importance of the after meal cup of coffee, and how often it's neglected, even at some of the finest restaurants in the World! "Finally, I got the cup of filter coffee I'd been served after dinner. It was a perfectly fine cup of coffee, but because everything else about that meal had been so unbelievably 𝘱𝘦𝘳𝘧𝘦𝘤𝘵 perfect, that just-okay cup of coffee stood out". It is always a joy to come together as a company during our townhalls. These sessions offer invaluable insights from all corners of Taziki's Mediterranean Cafe. With the guidance of Will Guidara's book, “Unreasonable Hospitality”, our time concluded with me posing a few questions: What are the little things that the restaurants you love do that make them your favorite restaurants? How can you create unique and tailored experiences for your guests that goes above and beyond their expectations?  I shared a few stories of unforgettable dining experiences (including an over-the-top dinner in Tulum Mexico a few years back) - and asked everyone to share memories of moments where they were made to feel seen, known, and special by restaurateurs who went above and beyond. While we have always been committed to serving up  great food from our kitchens, we were reminded that we need to strive to deliver nothing short of hospitality. It can start with a warm welcome that leads into engaging conversations. It can anticipate how to celebrate people’s big moments, and it is enhanced by  something I call “benevolent eavesdropping”. By actively listening to guests' comments and conversations, we can learn how to add unique and individualized experiences for our guests (Read the book - and look for the story about hot dogs). Ensuring this sense of unreasonable hospitality is one of our essential company objectives for 2024. How are you bringing hospitality to your work?
