Ingredients:
1 whole chicken (3 1/2 - 4 lbs)
Kosher salt
1 tbsp. Dijon mustard
2 tbsps. Balsamic vinegar
1 tbsp. extra-virgin olive oil
2 heads endive, leaves separated
2 cups arugula
1 pint cherry tomatoes, halved
2 sprigs tarragon, stemmed
