Rachael Finch has given an insight into exactly what she eats for lunch everyday as she shared her latest healthy cooking video.

The fitness influencer, 36, frequently posts cooking tutorials to Instagram and shared a video of herself making up a large lunch plate on Thursday.

In the footage, she was seen putting together a vast plate of healthy foods including spinach, white rice, a portion of scrambled egg and avocado.

Rachael completed her dish with a drizzle of oil and seasoning and revealed what her nutrition priorities are when putting together her large lunch plates.

She said she always focuses on a dish she can whip up quickly which includes a range of vegetables, protein and carbohydrates.

In a caption, she explained: '#WFH mix + match lunch idea. I think about: Loading with veg first, quality protein, and enough of it, carbohydrates that digest well in my body, quality fats, using up leftovers, how I can create it in 5-10min.

'What do you have planned for lunch today, either in the office or at home? (Secretly my favourite time of day).'

The model's fans took to the comments section to share their thoughts on the dish, as one shared their surprise over the large size of the healthy meal.

They wrote: 'Do you actually eat all that for lunch?,' prompting Rachael to simply reply: 'Lol yep.'

But other fans were more on board with the dish as one wrote: 'Looks so delish!'

A second gushed: 'You're such a role model for healthy eating, love all your health products.'

While a third said: 'Yum,' and a fourth added: 'All my favourite foods.'

Earlier this year, Rachael slammed trolls who bizarrely branded as an 'almond mum' and accused of 'endangering' her kids Violet, eight and Dominic, five.

'Almond mum' is a pejorative term for a mother who pushes disordered and unhealthy eating habits on her children. It is often used to refer to parents who are 'obsessed' with nutrition.

The backlash came after she shared a video of herself making her two children 'naked burgers' using lettuce cups instead of bread rolls.

A fired-up Rachael argued that the baseless accusation was frankly 'hilarious' as she slammed the critics of her healthy dinners.

Sharing a photo of herself cuddling up to her two children, Rachael wrote: 'Someone officially labeled me an "almond mum" this week. 

'Definition according to Google: "A parent who follows incredibly strict or dangerously unhealthy eating habits and attempts to force them on their children."

'This was because I made naked burgers for dinner (meat patty and veggies wrapped in a lettuce cup).

'Whilst it's downright nasty, it's also absurdly hilarious. I've become a pro at emotionally responding to these comments now. 

'I've had a giggle with a lot of you on what type of mum you would be if you were labelled by a food. Comment what type of food mum you would be?'

Several of Rachael's followers agreed 'almond mum' was an unfair label as they flocked to support the star.
